When I think of barbecue sauce, I few things come to mind; sweet, smoky, a little spicy, messy, sticky and finger-licking-good! Not all bottles of barbecue sauce measure up, and nothing beats making it yourself at home without preservatives and you cut the sugar way down! I have used spicy smoked paprika to introduce some spiciness and smokiness to the sauce. If you have a smoking gun at home, I guess you can use it to infuse some smoke flavour as well. If you would like more spiciness, you can add chili or cayenne pepper to the recipe as well. Barbecue sauce is an incredibly versatile sauce and all the ingredients are already in your pantry! Enjoy!

Ingredients
- 400g Ketchup
- 100g Brown sugar
- 50g Yellow mustard
- 15g Onion powder
- 135g Apple cider vinegar
- 4 cloves garlic (sliced, 1 teaspoon of garlic powder would work)
- 150g Chicken stock (you can use half a stock cube and 150g water)
- 15g Salt (check the saltiness of stock before adding salt)
- 2 tablespoons molasses
- 5g-10g spicy smoked paprika ( chili powder or cayenne pepper can be used in place)
Instructions
- Combine all the ingredients in a sauce pan.
- Simmer gently for 20-30 minutes. Stir occasionally to prevent burning and do not be tempted to cook it on high heat. This is better cooked gently to meld the flavours.
- If you used sliced garlic, you need to pass the sauce through a strainer to get rid of them.
- Cool and refrigerate.
