Puff puff is a delicious Nigerian snack very similar to the Dutch oliebollen. This fried dough has the power to make some many people happy, the ultimate party snack! A friend asked for the recipe yesterday and I figured it was a great opportunity to standardize the recipe and take all the guess work out of the process. If you have a sweet tooth, you can add a little more sugar to the recipe, but for me, this is perfect! Enjoy!

Ingredients
- 350g flour
- 100g sugar
- 400g water
- ¼ - ½ tsp freshly grated nutmeg
- 6g salt
- 10g instant yeast
- Oil for frying.
Instructions
- Measure all dry ingredients and mix in a large bowl.
- Make a well and slowly incorporate the water into the dough, and mix with a wooden spoon, try to get the dough as smooth as possible. This will be a very wet and sticky dough, a little thicker than a pancake batter.
- Cover and let proof (rise) for 45 minutes to 1 hour. The dough should be more than doubled in size.
- Heat oil to about 180˚C, make sure you have enough oil in the pan, this is a deep-fried dough.
- You can use a spoon to scoop the dough into the hot oil or your hands which yields rounder shaped balls. Fry till golden brown on both sides. If you are using a deep fryer, the temperature is regulated for you, in a pan, you will need to adjust the heat to prevent the oil from overheating.
- Puff puff is best enjoyed hot and on the day it was fried.
