Banana oatmeal pancakes are a combination of healthy and seriously delicious. The pancakes are sweetened only by the mashed banana, this illustrates how much natural sugar is present in bananas. Oats and bananas are a classic healthy breakfast combination, whether in pancakes, smoothie, overnight oats or porridge. I have listed the baking powder as an optional ingredient, it makes the pancake less dense, I have made the pancake several times without it, it may not be the prettiest but it will be equally delicious.

This is a quick, easy and healthy breakfast to make. I never have oatmeal flour at home, to save time in the morning I usually blend my rolled oats a night before and leave it in a bowl on the kitchen counter with a banana on top. You will be surprised by how good these pancakes are. Enjoy with fresh berries and maple syrup.

Ingredients
- ½ cup rolled oats or ¾ cup oatmeal flour
- 1 banana
- ¼ cup milk/soy milk/almond milk
- ⅛ teaspoon cinnamon powder
- ¼ teaspoon salt
- ¼ teaspoon baking powder (optional)
- 2 eggs
- Oil for cooking.
Instructions
- Blend rolled oats in spice blender
- Beat eggs in a bowl. Mash banana into the eggs.
- Add salt, cinnamon and baking powder.
- Mix in oat flour. Add the milk of choice and mix well.
- Lightly grease a non-stick pan and heat up the pan.
- Cook on one side till browned and easily moved with a spatula, flip and cook on the other side.
- Cook the pancake in 2 patches.
- Enjoy with fresh berries and maple syrup.
