Delicious and juicy hamburgers are a treat! Very often you order this world famous and incredibly popular sandwich and end up disappointed, the burger is not seasoned properly, its too dry or too fatty. So you make it home with the right seasoning, cook it to your taste and put whatever topping you like. Do not buy extra lean beef for burger as it will dry out quickly, I use beef mince with about 11-18% fat, which is not bad at all. Enjoy this burger for lunch and tell me all about later.

Ingredients

  • 500g beef mince
  • 1 egg
  • 1 teaspoon salt
  • ½ teaspoon crushed black pepper
  • ¼ teaspoon onion powder (or ½ fresh and finely minced)
  • ¼ teaspoon garlic powder (or 2 cloves of garlic, finely minced)
  • 2 tablespoons bread crumbs
  • Oil (for greasing the skillet or grill)
  • Garnish
  • Eggs - Sunny side up
  • Crispy bacon
  • Sliced tomatoes
  • Chopped lettuce
  • Cheese (several types of cheese work, so it’s up to you; I used cheddar)
  • Fries.
  • Burger sauce
  • 4 tablespoons mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • A dash of chilli sauce
  • Pinch of salt to taste.

Instructions

  1. In a large bowl, break an egg and whisk. Add all the seasonings and breadcrumbs, mix well.
  2. Add the beef mince into the bowl and gently rub the egg solution and seasoning into it till incorporated.
  3. Divide the beef into 4 equal portions, you can use a scale, weigh the beef and then divide by 4. Keeping them the same size ensures they cook consistently. Shape them in balls. Then flatten the balls into discs to form the burger. Cover and refrigerate till needed.
  4. To make the burger sauce, mix all the ingredients in a small bowl, cover and refrigerate.
  5. Heat up a cast iron skillet or grill pan, with about 1-2 tablespoons of oil. This pan needs to be very hot when you cook the burgers. You can also cook bacon strips till crispy in your skillet and then cook the burgers in the bacon fat, think about the flavours!
  6. Place burgers into the pan and cook for about 3-4 minutes per side (also depends on how flat you shaped your burgers). It may require less cooking time if flat so that it does not dry out, you need to end up with moist and cooked burgers. When you turn the burger, place the cheese on top of the cooked side, that melting cheese is a delightful sight. If the burgers seem to be burning, lower the heat or transfer the pan to a preheated oven to finish cooking about 5 minutes. Another burger cooking trick is to put a lid on the burger, which creates steam to cook the burger faster. You can cook your burg too.It is recommended that your burger be fully cooked so a core temperature of 70˚C.
  7. Assemble the burger. Cut burger buns in half, butter both halves and toast it. Place the bottom on a plate, set some lettuces leaves and the burger on top. Continue building your burger with any garnish you like such as bacon, fried egg, caramelized onions, onion rings, guacamole, etc.
  8. Enjoy with fries and a drizzle of the burger sauce.
